Instructions

1.In the bowl of a stand mixer put flour, dry milk powder sugar, yeast and salt and mix well.
2.Add water and butter and mix with the dough hook attachment until dough comes together.
3.Knead dough for 5 minutes.
4.Remove the bowl from the mixer and spray with cooking spray.
5.Return the dough to the bowl, cover with plastic wrap and let it rise until it doubles in size, this may take up to an hour.
6.Sprinkle some cornmeal on a flat surface and sprinkle flour on top.
7.Deflate dough and turn onto a floured surface.
8.Using a rolling pin, flatten dough into a rectangle about 1/2 inch thick.
9.Use a cookie cutter or a large biscuit cutter, to cut muffins out of the dough and place them on a cookie sheet sprinkled with cornmeal.
10.Sprinkle some oats on top of each muffin.
11.Let the muffins rise again for 20-30 minutes.
12.Preheat a skillet on medium heat and place muffins on it, cooking each side until golden brown, about 3-5 minutes per side.
13.Let muffins cool before serving. They can be stored in airtight container for up to a week.
