Ingredients

200 g butter , at room temperature , plus a little extra for greasing
175 g light brown sugar
2 tablespoons golden syrup
1 tablespoon black treacle or 1 tablespoon molasses
150 ml milk
2 large eggs , beaten at room temperature
4 pieces preserved ginger in syrup , chopped
300 g self-raising flour , sifted
2 teaspoons baking powder
1 tablespoon ground ginger
1 teaspoon grated fresh gingerroot
1 lemon , juice of
225 g icing sugar
2 pieces preserved ginger in syrup
4 tablespoons ginger syrup ( from jar of stem ginger in syrup )

Instructions

1.Preheat the oven to 170°C/325°F/gas 3. Grease and line a 900 g loaf tin with greaseproof paper.
2.In a large mixing bowl, beat together the butter, sugar and golden syrup until creamy.
3.Add the black treacle or molasses and beat again until well combined.
4.Gradually add the milk, eggs, and preserved ginger and mix well.
5.Sift in the flour, baking powder, ground ginger and grated ginger, and fold in.
6.Spoon the mixture into the prepared tin and bake for 50-55 minutes, or until a skewer comes out clean.
7.While the cake is still warm, mix together the lemon juice and icing sugar until smooth. Prick the cake all over with a fork and pour the icing over the top.
8.Chop the remaining pieces of preserved ginger and scatter over the icing. Drizzle the ginger syrup over the top.
