Ingredients

2 tablespoons vegetable oil
1 onion , finely chopped
1 large carrot , diced
500 g beef mince
1 tablespoon tomato puree
300 ml beef stock , hot
1 1/2 tablespoons Worcestershire sauce
3 -5 fresh thyme leaves
350 g floury potatoes
350 g parsnips
3 tablespoons 1 % low-fat milk
1/4 teaspoon freshly grated nutmeg
50 g mature cheddar cheese , grated
The English Cottage Pie, also known as Shepherd's Pie, is a classic British dish traditionally made with minced lamb topped with mashed potatoes. This version of the dish, however, uses beef mince instead of lamb and is topped with a delicious cheddar and parsnip mash. Instructions

1.Preheat the oven to 200°C (conventional) or 180°C (fan).
2.Heat the oil in a pan on medium heat and sauté the onion and carrot until softened.
3.Add the beef mince, season with salt and pepper and cook until the beef has browned.
4.Add the tomato purée, beef stock, Worcestershire sauce and thyme, bring to the boil and simmer for around 35 minutes.
5.Meanwhile, boil the potatoes and parsnips for 20 minutes, or until soft.
6.Drain the potatoes and parsnips and mash with the milk, nutmeg and grated cheddar cheese.
7.Add the beef mixture to a ovenproof dish and top with the mash. Smooth with a fork and bake for 20 minutes, or until the mash is golden brown and the beef is piping hot.
