Ingredients

400 g gooseberries , washed and prepared
100 g plain flour
50 g butter
50 g demerara sugar
50 g oats
1 teaspoon dried lavender flowers
85 g caster sugar
2 pieces lemon rind
100 ml water
2 -4 drops lavender oil , cooking essence ( to taste )

Instructions

1.Preheat the oven to 180 C
2.In a bowl mix together flour, oats, demerara sugar and butter. Rub together to form bread crumbs
3.Add in dried lavender flowers and mix well
4.In a saucepan mix together water, caster sugar, lemon rind and heat until it forms a syrup. Add lavender oil
5.Add in gooseberries to the syrup and let them cook for a minute
6.Grease a baking dish and add the syrup-covered gooseberries to the dish
7.Spread the crumble mixture on top
8.Bake for 30-40 minutes until golden brown. Serve hot or cold
