Ingredients

1 can rosarita refried beans
1 cup beef broth ( I sometimes use chicken if I 'm out of beef )
1/2 cup Wesson Oil , divided
1 small yellow onion , cut into 8 wedges
1/4 teaspoon salt
12 corn tortillas
1/2 cup Mexican crema or 1/2 cup sour cream , thinned slightly with milk
1/4 cup crumbled queso fresco

Instructions

1.In a medium-sized saucepan over medium heat, add refried beans and beef broth and stir for 10 minutes or until heated thoroughly.

3.Remove onions from the pan and set aside. Add remaining Wesson oil and salt. Heat tortillas on both sides until lightly browned.
4.Place tortilla on a plate and spread refried bean mixture over it. Top with crispy onions, thinned sour cream, and crumbled queso fresco.
