1 onion
3 peppercorns
1 lb tomatillo , fresh
1 clove garlic
to taste oil
1 tablespoon olive oil
6 corn tortillas
to taste monterey jack cheese , shredded

Instructions

1.Preheat the oven to 375°F.
2.In a medium pot, boil chicken breasts with onion and peppercorns for about 20 minutes, until fully cooked. Reserve the broth.
3.Blend tomatillos, garlic, and 1/4 cup of the chicken broth until smooth.
4.Heat oil in a large skillet over medium-high heat. Add the tomatillo mixture and cook for 4-5 minutes until slightly thickened. Remove from heat.
5.Shred the chicken breasts and mix with 1/2 cup of the tomatillo sauce.
6.Grease a baking dish and fill each tortilla with chicken mixture. Roll and place in the dish.
7.Pour the rest of the tomatillo sauce evenly over the enchiladas. Sprinkle shredded Monterey Jack cheese on top.
8.Bake uncovered for 20-25 minutes until cheese is melted and enchiladas are heated through.
