Ingredients

1 tablespoon vegetable oil
2 pounds skinless , boneless chicken breast halves - cut into 1 inch pieces
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1 can enchilada sauce
2 cups shredded iceberg lettuce
2 cups shredded Colby cheese
1 package corn tortillas
1 onion , chopped
1/2 cup sour cream ( optional )
6 fried eggs ( optional )

Instructions

1.Preheat the oven to 350 degrees F (175 degrees C).
2.Heat vegetable oil in a skillet over medium heat and cook chicken until browned.
3.Stir in the cumin, chili powder and can of enchilada sauce.
4.Grease a 9x13 inch baking dish.
5.Warm up the corn tortillas in the preheated oven.
6.Fill each tortilla with chicken mixture, onion, Colby cheese, and lettuce.
7.Roll up tortillas and place seam side down in the baking dish.
8.Pour remaining enchilada sauce over tortillas and sprinkle with more cheese.
9.Bake in the preheated oven until cheese is melted, for 10 to 15 minutes.
10.Top each enchilada with a fried egg and some sour cream, if desired.
