2 tablespoons cooking oil
12 corn tortillas
1/2 lb grated longhorn cheese
1 large white onions or 1 large yellow onion
1 tablespoon butter
4 eggs
shredded lettuce
24 -30 dried red chile pods
4 -5 cups water
1 teaspoon salt

Instructions

1.Preheat the oven to 350 degrees F (175 degrees C).
2.Heat the cooking oil in a skillet over medium-high heat.

5.In a medium saucepan, melt the butter over medium heat.

11.Take the cooled tortillas and dip them in the chile sauce.
12.Put the tortilla on a plate and add a sprinkling of cheese and onion.
13.Roll the tortilla and place it seam-side down in a 9x13 inch baking dish.
14.Repeat with remaining tortillas and chicken, then spoon any remaining sauce over the top.
15.Cover with foil and bake for about 20 minutes.
16.Serve on a plate and top with lettuce and extra cheese if desired.
