1 1/2 lbs boneless skinless chicken breasts

Enchilada Ranch Casserole is a twist on traditional enchiladas, a popular Mexican casserole. Instructions

1.Preheat your oven to 350°F or 175°C.
2.In a large skillet, cook the chicken breasts until they are no longer pink. Let them cool down and then shred them with a fork.
3.In a large bowl, mix the cream of chicken soup, 1/2 can of red enchilada sauce, shredded chicken, and 1 can of undrained and rinsed black beans. Mix well and set aside.
4.In another bowl, mix 8 ounces of sour cream, 3 cups of shredded medium sharp cheddar cheese, 1 package of ranch dressing mix, and 1 can of diced green chilies.
5.In a 9x13 inch baking dish, spread a small amount of red enchilada sauce on the bottom.
6.Cover the sauce with a layer of the flour tortillas, overlapping slightly.
7.Spoon a layer of the chicken mixture over the tortillas, and then sprinkle with crushed cool ranch Doritos.
8.Repeat the layering process, finishing with a layer of the cheese and sour cream mixture.
9.Bake for 30-35 minutes until the cheese is bubbly and the tortillas are slightly crispy.
10.Serve your Enchilada Ranch Casserole with a dollop of sour cream, salsa, and black olives.
