Ingredients

2 quarts hot water
1/2 cup quick-cooking barley

1 lb ground pork
1 1/2 ounces mccormick taco seasoning mix
3/4 cup water
2 cans enchilada sauce
1/3 cup yellow cornmeal
2 tablespoons vegetable oil or 2 tablespoons bacon fat
salt and pepper

Instructions

1.In a large pot, bring 2 quarts of hot water to a boil and add quick-cooking barley. Cook for 10-12 minutes or until tender.
2.Add chopped tomatoes with juice, fresh mushrooms, and chopped onion to the pot. Let simmer for 5-7 minutes.
3.In a separate pan, cook ground pork until browned. Drain any excess fat and add mccormick taco seasoning mix and 3/4 cup of water. Let simmer for 5-7 minutes.
4.Add enchilada sauce, yellow cornmeal, and vegetable oil or bacon fat to the pot. Stir well to combine.
5.Add ground pork mixture to the pot and simmer for another 10-12 minutes.
6.Season with salt and pepper to taste.
7.Serve hot with tortilla chips on top.
