Ingredients

1 can red chili sauce ( I use Las Palmas original )
1 can tomato sauce
1 large onion , chopped
1 can sliced olives
1 teaspoon salt
1 lb monterey jack cheese
1 1/2 lbs ground beef
6 -8 small corn tortillas
2 garlic cloves , chopped

Instructions

1.Preheat oven to 375°F.
2.In a large skillet, cook the ground beef and onions together over medium-high heat until the ground beef is no longer pink and the onions are soft.
3.Add the garlic and cook for an additional 2 minutes.
4.Add the red chili sauce, tomato sauce, olives, and salt, stirring until well combined.
5.Reduce heat to low and let simmer for 10 minutes.
6.Spread a thin layer of the meat sauce in the bottom of a large baking dish.
7.Add a layer of corn tortillas, tearing them if necessary to fit.
8.Add a layer of the meat sauce, spreading it evenly over the tortillas.
9.Add a layer of grated cheese.
10.Repeat layers of tortillas, meat sauce, and cheese until all ingredients are used.
11.Cover with foil and bake for 25 minutes.
12.Remove foil and bake for an additional 10-15 minutes, or until cheese is melted and bubbly.
13.Let cool for a few minutes before slicing and serving.
