Ingredients

2 cups cubed cooked chicken
1 cup sour cream
1/8 teaspoon salt
1 pinch ground black pepper
1/2 cup vegetable oil for frying
12 corn tortillas
1 can chopped green chilies , drained
2 cups shredded Monterey Jack cheese
The sour cream chicken enchiladas also known as Enchanted chicken enchiladas are a classic Mexican favorite food. This dish is made by rolling up soft tortillas around juicy chicken and creamy sour cream sauce. Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.In a mixing bowl, combine chicken, sour cream, salt and black pepper, mix well.
3.Heat the vegetable oil in a frying pan over medium−high heat. Fry each tortilla until soft, about 15-20 seconds on each side. Place them on paper towels to drain excess oil.
4.Divide chicken mixture and green chilies evenly among tortillas, roll up each tortilla and place seam side down in a lightly greased baking dish.
5.Sprinkle shredded Monterey Jack cheese over the enchiladas, cover with foil and bake for about 20-25 minutes. Remove foil and bake for additional 5-10 minutes or until cheese is bubbly.
