1 1/2 teaspoons fresh ginger , chopped
3 lbs boneless skinless chicken breasts , cubed
1/4 cup dark soy sauce ( tamari )
1 large egg , beaten
1/2 cup cornstarch
2 cups green onions , minced ( one bunch )
8 small hot peppers , diced ( I used jalapenos )

Instructions

1.In a small bowl, whisk together chicken broth, sugar, and 1/4 cup cornstarch until smooth.

3.In a large mixing bowl, combine cubed chicken, egg, and 1/2 cup cornstarch.
4.In a wok or large skillet, heat 1/4 inch oil over medium-high heat until hot.
5.Fry chicken in batches until golden and crispy, about 5 minutes per batch.
6.Remove chicken from oil and drain on paper towels.
7.Pour sauce into wok or skillet and bring to a boil, stirring constantly until thickened.
8.Add chicken and stir to coat in sauce. Cook for an additional 2-3 minutes to heat through.
9.Serve hot over rice, garnished with minced green onions and hot peppers.
