2 cups precooked yellow cornmeal ( masarepa )
3 cups hot water ( almost boiling )
1 tablespoon sazon goya with azafran ( optional )
1/2 teaspoon salt
2 cups white potatoes , peeled and cut into very small dice
1 chicken bouillon cubes ( Vegeta ) or 1 vegetable bouillon cube ( Vegeta )
1 tablespoon olive oil
1/2 cup white onion , chopped
1 cup chopped tomato
1/4 cup green onion , chopped
1 garlic clove , minced
2 tablespoons fresh cilantro , chopped
2 tablespoons red bell peppers , chopped
1 lb ground beef
salt & freshly ground black pepper
1 tablespoon cumin
1 teaspoon sazon goya
oil ( for deep frying )

Instructions

1.In a bowl, combine the precooked yellow cornmeal, almost boiling water, sazon goya with azafran, and salt.
2.Mix well with a spatula to form a dough.
3.In a pan, heat the olive oil over medium heat. Add the diced potatoes and bouillon cube. Cook until the potatoes are tender.
4.Add the chopped onion, tomato, green onion, garlic, cilantro, and red bell peppers to the pan. Cook for roughly 5 minutes until the vegetables are soft.
5.Add the ground beef, salt, black pepper, cumin, and sazon goya. Cook until the beef is browned and cooked through.
6.Preheat oil for frying in a deep skillet over medium-high heat.
7.Use 2 tablespoons of the dough to form a small ball and flatten with your hands. Put a tablespoon of the beef mixture in the center.
8.Close the dough around the mixture to make a half-moon-shaped empanada. Press the edges together with a fork to seal.
9.Fry in the hot oil until golden brown, approximately 4-5 minutes.
10.Repeat with the remaining dough and beef mixture.
