12 fresh asparagus spears , cut into 2-inch lengths ( about 8 ounces )

Instructions

1.Preheat oven to 350°F.
2.Whisk eggs, milk, salt, pepper in a bowl until well blended.

4.Melt butter in a 10-inch-diameter nonstick ovenproof skillet over medium heat. Add mushrooms and shallots/red onion and sauté until tender and browned, about 8-10 minutes. Add asparagus and sauté until crisp-tender, about 3 minutes longer.
5.Pour egg mixture over the vegetables; do not stir. Cook until almost set, but still runny on top, about 5 minutes.
6.Place skillet in oven and bake until frittata is set, about 10 minutes. Using a rubber spatula, loosen the frittata from skillet and slide the frittata onto a large plate.
7.Cut the frittata into wedges and serve hot or at room temperature.
