4 pork chops
2 tablespoons plain flour
1 tablespoon mixed herbs
1 green pepper , finely diced
2 tablespoons oil
1 1/2 lbs potatoes
1 1/2 lbs tomatoes
2 ounces single cream
2 tablespoons tomato puree
1 red pepper
200 g canned tomatoes
3 tablespoons balsamic vinegar

Instructions

1.Preheat the oven to 220°C.
2.Peel and slice the potatoes into 1cm pieces. Spread them out on a baking sheet and drizzle them with a tablespoon of oil. Roast them in the oven for 20-25 minutes.
3.Heat up a frying pan over medium heat. Add in the second tablespoon of oil.
4.In a bowl, mix the plain flour and mixed herbs thoroughly. Dip each pork chop in the mixture and make sure all sides are coated.
5.Fry the pork chops in the hot frying pan for around 5 minutes on each side, or until cooked through and thoroughly browned. Set aside.
6.In the same frying pan, cook the diced green peppers and red peppers for 3-4 minutes on medium heat.
7.Add the canned tomatoes, tomato puree, and balsamic vinegar. Cook and simmer for 5 more minutes.
8.Reduce heat to low, then add the single cream and stir well.
9.Slice the roasted potatoes into small pieces and add them in the sauce. Add 1 1/2 lbs of chopped fresh tomatoes as well. Let the mixture cook for another 5 minutes.
