LADYFINGERS
5 eggs , separated
3/4 cup white sugar , divided
1 cup all-purpose flour

SYRUP
1 cup white sugar
1 cup boiling water
1/2 cup strong brewed coffee
1/4 cup rum
FILLING
1 container mascarpone cheese
2 cups confectioners ' sugar
1/4 cup dark rum
1 teaspoon vanilla extract
2 cups heavy cream
TOPPING
2 squares semisweet chocolate , grated
1/8 cup confectioners ' sugar for dusting
Tiramisu is a traditional Italian dessert that translates to 'pick-me-up.' This dessert is rich and creamy with a lovely coffee flavor, making it a perfect dessert for coffee lovers like Emily. Emily's famous Tiramisu is made with layers of ladyfingers dipped in espresso and rum and covered with a sweet mascarpone cream. Instructions

1.To make the ladyfingers, preheat your oven to 350 degrees F. and line two 9-inch baking sheets with parchment paper.
2.In a large bowl, beat egg yolks and 1/2 cup of white sugar until thick and light.
3.In another bowl, beat egg whites until they form soft peaks, and add 1/4 cup of white sugar.
4.Add flour and vanilla extract to egg yolk mixture and mix until well combined.
5.Gently fold the egg white mixture into the egg yolk mixture until no white streaks remain.
6.Spoon the batter into a pastry bag fitted with a round tip and pipe 3-inch fingers onto the prepared baking sheets.
7.Bake for 15 minutes or until golden brown.
8.To make the syrup, combine 1 cup white sugar and 1 cup boiling water in a small saucepan. Cook over medium heat, stirring constantly, until sugar dissolves.
9.Remove from heat and stir in coffee and rum. Cool.
10.For the filling, combine the mascarpone cheese, confectioners' sugar, dark rum, and vanilla extract in a large bowl and mix well.
11.In another bowl, whip the heavy cream until it forms stiff peaks.
12.Fold the whipped cream into the mascarpone mixture until well combined.
13.To assemble the tiramisu, dip each ladyfinger briefly in the syrup mixture and place in a single layer in a 9x13 inch baking dish.
14.When the bottom of the dish is covered, spread half of the mascarpone mixture on top.
15.Repeat with another layer of ladyfingers and remaining mascarpone mixture.
16.Sprinkle grated chocolate on top and dust with confectioners’ sugar.
17.Refrigerate for at least 4 hours before serving.
