2 tablespoons creole seasoning
1 1/2 teaspoons salt

1 tablespoon garlic , minced
1 1/2 cups heavy cream
1/2 teaspoon fresh ground black pepper
1 cup diced tomato
1/2 cup reserved pasta cooking water
1 cup monterey jack pepper cheese , grated
1/4 cup parmesan cheese , grated
2 tablespoons basil leaves , chopped

Instructions

1.Bring a large pot of water to a boil and add the kosher salt. Cook the linguine according to package directions until it is al dente.
2.Meanwhile, heat the butter and olive oil in a large skillet over medium-high heat.
3.Season the shrimp with Creole seasoning and salt, and add it to the skillet. Cook the shrimp for 2 to 3 minutes on each side until it is pink and cooked through. Remove the shrimp and set it aside.
4.In the same skillet, saute the onions, jalapeno, and garlic until the onions are translucent, about 5 minutes.
5.Stir in the heavy cream, black pepper, diced tomatoes, and reserved pasta cooking water. Simmer the sauce until it thickens slightly, 3 to 4 minutes.
6.Stir in the Monterey Jack pepper cheese and Parmesan cheese until it is melted and the sauce is smooth. Return the shrimp to the skillet and heat it through.
7.Drain the linguine and add it to the skillet, tossing it with the sauce and shrimp until it is coated. Sprinkle the chopped basil over the pasta and serve immediately.
