2 lbs yukon gold potatoes , peeled and thinly sliced
2 tablespoons olive oil
4 medium onions , peeled and thinly sliced
salt and white pepper , to taste
1/2 cup butter
1 tablespoon finely chopped parsley

Instructions

1.Preheat oven to 400 degrees F.

3.In another large saute pan, melt the butter over medium-high heat. Add the sliced onions and saute until they are tender and caramelized.
4.Add the cooked potatoes to the pan with the onions and toss them together.
5.Scrape the mixture into an ovenproof dish, and bake for 10-15 minutes until the top is crispy and golden brown.
6.Garnish with chopped parsley and season with salt and white pepper to taste.
