1 1/2 lbs lasagna noodles , cooked and drained
1 cup freshly grated parmesan cheese
2 tablespoons butter
6 slices bacon , diced
1/4 lb cooked ham , diced
1/2 lb ground veal ( or 1/4 pound of each ) or 1/2 lb ground pork ( or 1/4 pound of each )
1 1/2 cups chopped onions
1/2 cup finely chopped carrot
1/4 cup thinly sliced celery
3 garlic cloves , minced
1 pinch of dried clove
3 tablespoons tomato paste
1 cup dry white wine
4 cups chicken stock
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1/2 cup heavy cream
1/4 cup chopped parsley
4 1/2 cups whole milk
6 tablespoons butter
6 tablespoons flour
1 teaspoon salt
1/4 teaspoon nutmeg

Instructions

1.Preheat oven to 375°F.

Add wine and cook, scraping up any browned bits, until liquid has nearly evaporated, about 5 minutes. Add chicken stock, salt and black pepper and bring to a boil. Reduce heat and simmer, stirring occasionally, until thick and flavorful, about 1 hour.
4.Béchamel Sauce - In a medium saucepan, melt butter over medium heat. Add flour and whisk continuously for 2 minutes. Gradually whisk in milk and bring to a slow simmer. Cook, whisking occasionally, until sauce is thick and smooth, about 25 minutes. Season with salt, pepper and nutmeg.
5.Assemble Lasagna - In a greased 13 x 9 inch baking dish, spoon a layer of Bolognese sauce. Cover with a layer of noodles and top with 1/3 of the Parmesan cheese and then 1/3 of the Béchamel sauce. Add another layer of noodles and repeat until all the ingredients are used, ending with Béchamel sauce and Parmesan cheese on top.
6.Bake Lasagna - Cover lasagna with foil and bake until bubbly and heated through, about 40 minutes. Remove foil and bake until cheese is golden brown and crispy, about 15 more minutes. Let rest for 10 minutes before serving.
