Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Grease a 1 1/2-quart soufflé dish with 1 1/2 tablespoons of the butter.
3.Coat the inside of the dish with breadcrumbs and parmesan cheese.
4.Melt the remaining butter in a saucepan, then sauté the shallots over medium heat until they are softened.
5.Stir in the flour and cook for 1 minute.
6.Gradually whisk in the milk until the sauce begins to thicken. Reduce the heat to low and continue to cook the sauce for another 5 minutes.
7.Remove the saucepan from the heat and whisk in the egg yolks one at a time.
8.Crumble the goat cheese and add it to the sauce with the tarragon, salt, and pepper.
9.In a separate bowl, beat the egg whites and cream of tartar together until they form stiff peaks.
10.Fold the egg whites gently into the sauce until just combined.
11.Pour the mixture into the prepared soufflé dish and smooth the top with a spatula.
12.Place the soufflé dish into a larger baking dish or roasting pan, then pour enough hot water into the larger dish to come halfway up the sides of the soufflé dish.
13.Bake the soufflé for 30 to 35 minutes, or until it is puffy and golden-brown.
14.Remove the soufflé from the oven and serve immediately while still hot.
