Ingredients

2 tablespoons vegetable oil , plus 8 cups for frying
1/2 cup diced white onion
1 1/2 teaspoons minced garlic
1 tablespoon chili powder
1/2 teaspoon chili powder
1/4 teaspoon ground oregano
1/2 teaspoon ground cumin
1 1/2 lbs cooked chicken breasts , shredded while warm
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 can chopped green chilies , drained
8 flour tortillas , warmed
1 cup shredded monterey jack cheese

Instructions

1.Heat the 2 tablespoons of vegetable oil in large skillet over medium heat.
2.Add the onion and garlic and cook, stirring, until onions become translucent, about 5 minutes.
3.Add the chili powder, cumin and oregano, and cook, stirring, until fragrant, about 1 minute.
4.Add the shredded chicken, salt, black pepper, and green chiles and cook until the mixture is heated through.
5.Preheat the oven to 200 degrees F.
6.Lay the tortillas on a flat surface and spoon about 1/2 cup of the chicken filling slightly below the center of each tortilla.
7.Sprinkle about 2 tablespoons of the Monterey Jack cheese on top of the filling.
8.Fold the sides of each tortilla toward the center and then roll up tightly from the bottom to make a burrito shape.
9.Heat the 8 cups of vegetable oil in a deep, heavy pot until a deep-fat thermometer registers 360 degrees F.
10.Carefully place the chimichangas in the hot oil and fry in batches until golden brown, about 4 minutes per batch.
11.Drain on paper towels and keep warm in oven.
12.Serve with sour cream, guacamole and salsa.
