Ingredients

4 cups milk ( I use whole )
1 teaspoon salt
1/2 lb lard
3 envelopes active dry yeast
5 lbs all-purpose flour , divided
12 large eggs
4 cups sugar
1 lemon , zest of , grated
1 large egg beaten with 1 tablespoon water , for glaze

Instructions

1.Heat the milk and salt together in a medium saucepan over low heat until the temperature reaches 110 degrees F. Remove from heat and set aside.

3.Gradually add 2 pounds of flour to the yeast mixture, alternately adding the warm milk and eggs. Mix together until smooth.

5.Turn the dough out onto a floured surface and knead for 10 to 15 minutes or until the dough is smooth and elastic.
6.Place the dough in a large greased bowl, turning once to grease the top. Cover and let rise in a warm place for 2 hours, or until doubled in size.
7.Preheat the oven to 350 degrees F.
8.Turn the dough out onto a lightly floured surface and divide into 3 equal parts. Shape each part into a round loaf and place on a greased baking sheet. Cover and let rise in a warm place for 30 minutes.
9.Brush the loaves with the egg wash and bake for 30 to 40 minutes, or until golden brown.
10.Remove the loaves from the oven and let cool on wire racks before serving.
