Elephant Walks Loc Lac is a traditional Cambodian dish that is often served in restaurants today. The name comes from the way the beef is prepared to look like elephant medallions. The beef is marinated in a spice mixture and then quickly stir-fried to maintain its tenderness and juiciness. The lime dipping sauce adds delicious tanginess and balance to the dish. Instructions

1.In a small bowl, mix together 2 pinches of kosher salt, 1 tablespoon of sugar, 1 tablespoon of finely chopped garlic, and 1 teaspoon of fresh ground black pepper.
2.In a large bowl, mix the spice mixture with 3 tablespoons of soybean oil and the cubed beef until well coated.
3.Heat a large skillet over high heat and add the beef mixture. Cook for about 5-6 minutes or until the beef is browned and cooked through.
4.In another bowl, whisk together 2 teaspoons of sugar, 1 teaspoon of salt, 1/4 cup of freshly squeezed lime juice, 1/4 cup of water, 1 teaspoon of fresh ground black pepper, and 2 teaspoons of finely chopped garlic.
5.In the same skillet, heat 3 tablespoons of soybean oil (or any vegetable oil) over medium heat. Add 4 tablespoons of finely chopped garlic and 1 1/2 teaspoons of fresh ground black pepper. Cook until the garlic is golden brown, then add in the sauce mixture. Cook for 1-2 minutes or until thickened.
6.Lastly, stir in 1/3 cup of mushroom soy sauce and cook for another 1-2 minutes.
7.Serve the beef with lettuce leaves and a sprinkle of thinly sliced scallion on top. Serve over jasmine rice.
