2 lbs boneless top round beef , cut into 1 1/2-inch cubes
1/2 cup peeled thinly sliced gingerroot ( about 2 ounces )
3 dried New Mexico chiles , soaked , seeded and deveined
3 garlic cloves , coarsely chopped
1 large shallot , coarsely chopped
1/2 cup water
5 tablespoons vegetable oil
3 tablespoons sugar
2 tablespoons fish sauce
1 tablespoon mushroom soy sauce
1 teaspoon salt
1 teaspoon fresh ground pepper
1 cup chicken broth
1 cup green coconut juice
1/4 cup tamarind juice
fresh cilantro stem , for garnish

Instructions

4.Add the beef, seasoning with salt and pepper to taste, and brown on all sides. Remove the beef and set aside.
5.In the same pot, sauté the prepared paste until fragrant.
6.Add the sugar, fish sauce, mushroom soy sauce, chicken broth, green coconut juice, tamarind juice, and 1/2 cup of water and simmer for 1.5-2 hours until the beef is tender.
7.Serve the stew hot, garnished with cilantro and sliced cucumber.
