Ingredients

1 medium eggplant
1/2 cup walnut pieces
1/4 cup minced onion
1/4 cup minced fresh parsley
1 teaspoon minced hot chili pepper ( to taste )
1 -2 garlic clove , minced
1/2 teaspoon salt
fresh ground black pepper , to taste
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
Eggplant Caviar is a beloved dip originally from Russia, traditionally served with handmade blinis (very thin pancake). Later the recipe was upgraded and took a place in French cuisine. This wonderful recipe is a fusion of Mediterranean flavor with eggplant as the centerpiece, and it's perfect for a starter vegan menu, be it for celebrations or a simple family gathering. Elegant eggplant caviar is beyond fabulous, as it’s easy to make with few ingredients that will leave an impression on your guests.

Instructions

1.Preheat oven to 350°F.
2.Prick eggplant all over with a fork; place on a baking sheet.
3.Bake the eggplant until it’s wilted, about 45 minutes, turning it midway through the baking time.
4.Let it cool.
5.With a knife, split open the eggplant.
6.Scrape out the flesh and discard the skin.
7.Place eggplant flesh in a mixing bowl.
8.Add walnuts, onion, parsley, chili pepper, garlic, salt, pepper, olive oil and lemon juice.
9.Mix to combine all the ingredients.
10.Cover at room temperature for several hours or chilled in the refrigerator overnight.
11.Serve as a toothsome appetizer or snack and enjoy!
