The dish is made with tender beef tenderloin steaks that are seared to perfection and served with a savory blue cheese sauce that is the perfect complement to the meat. This dish may be a bit more labor-intensive than some other recipes; however, the end result is well worth the effort.

Instructions

.Preheat oven to 425°F.
.Remove the beef from the refrigerator and let it stand at room temperature for 15-30 minutes before cooking.
.Snap off the woody ends of the asparagus and discard them. Arrange the asparagus in a single layer on a rimmed baking sheet.
.Sprinkle the asparagus spears with thyme, salt, and pepper. Drizzle the butter and olive oil over the top and toss the asparagus until evenly coated.
.Roast the asparagus in the preheated oven for 12-15 minutes, or until it is tender yet still crisp.
.Meanwhile, heat a large skillet over medium-high heat. Add the beef steaks and cook for 3-4 minutes per side, or until they are browned and cooked to your desired doneness.
.Transfer the steaks to a separate plate and cover them with foil to keep them warm.
.Add the white wine to the skillet and scrape any browned bits from the bottom of the pan.
.Boil the wine until it has reduced by half, then add the beef consomme and half-and-half, and continue cooking the sauce for another 3-5 minutes, or until it has thickened and reduced slightly.
.Add the crumbled blue cheese to the sauce and whisk until it has melted and incorporated into the sauce.
.To serve, arrange the beef steaks on plates and top each steak with the blue cheese sauce. Serve the roasted asparagus on the side.
