1 cup pineapple juice
4 tomatoes

3 dried guajillo chilies
6 japone chiles
1 tablespoon salt
1/2 teaspoon white pepper
1 clove fresh garlic
ground cumin , to taste
2 teaspoons dried oregano
1/2 cup red wine vinegar
1/2 cup salad oil
El Torito Adobo Al Pastor Sauce is a traditional Mexican sauce that is fantastic with a variety of dishes. Instructions

1.In a saucepan, combine the pineapple juice, tomatoes, yellow onion, green onions, cilantro, guajillo and Japone chilies, salt, white pepper, garlic, cumin, and oregano.
2.Bring the mixture to a boil over high heat, then reduce the heat to low.
3.Simmer the sauce, covered, for 15 minutes.
4.Remove the saucepan from heat and let the mixture cool slightly.
5.Working in batches, puree the sauce in a blender until smooth.
6.Return the pureed sauce to the pan and stir in the red wine vinegar and salad oil.
7.Cook the sauce over medium heat for 5 minutes.
