2 -3 cups shredded cooked chicken
24 ounces salsa
5 flour tortillas
15 ounces refried beans ( fat free is good )
2 cups shredded cheddar cheese
1/4 cup chopped fresh cilantro ( optional )

Instructions

1.Preheat oven to 375°F.
2.In a mixing bowl, combine the shredded chicken and 16 ounces of the salsa.
3.In a separate bowl, mix together the refried beans and remaining 8 ounces of salsa.
4.In a greased 11x7 inch baking dish, place one of the tortillas on the bottom. Spread a layer of the refried beans mixture followed by a layer of the chicken mixture onto the tortilla.
5.Repeat the process, layering each tortilla with the beans mixture and chicken mixture, reserving enough chicken mixture to layer on top of the last tortilla.
6.Sprinkle the shredded cheddar cheese over the top layer of chicken mixture.
7.Bake uncovered for 20-25 minutes, or until cheese is melted and bubbly.
8.Remove from oven and allow to cool for a few minutes before serving. Optional: top with chopped cilantro and a dollop of sour cream.
