1 can diced green chilies ( or you can get a bigger can and cut them in strips )
1/2 cup sour cream
1 tablespoon green onion , chopped

Instructions

1.Preheat oven to 350°F.
2.Combine canned stewed tomatoes, tomato puree, bay leaves, chopped onion, finely chopped garlic, salt, and oregano in a blender. Blend until smooth.
3.Heat the vegetable oil in a skillet over medium heat. Add the chopped green pepper and cook until soft, about 5 minutes.
4.Add the tomato sauce to the skillet and simmer for 10 minutes until the sauce has thickened.
5.Spoon some of the sauce into the bottom of a 9x13 baking dish.
6.Warm the tortillas in the microwave for 30 seconds.
7.Add 1/4 cup of grated cheese and some chopped onion onto each tortilla, roll up and place seam-side down in the baking dish.
8.Pour the remaining sauce over the enchiladas, then sprinkle with diced green chilies and any remaining grated cheese.
9.Bake the cheese enchiladas for 20-25 minutes, or until the cheese is melted and bubbly.
10.Garnish with a dollop of sour cream and chopped green onions.
