Ingredients

4 tablespoons butter
1 small onion , finely chopped
2 -3 fresh green chilies , finely chopped
1 teaspoon grated fresh ginger
8 eggs , lightly beaten
2 tablespoons heavy cream ( or half and half , milk , etc )
1/2 teaspoon salt
1 tablespoon chopped fresh cilantro
Ekuri is a popular breakfast dish in the northeastern parts of India, particularly in the state of Assam. Usually eaten with plain rice or bread, this dish is made by scrambling eggs with onions, green chilies, and ginger. The addition of fresh cilantro at the end gives it a nice aroma and freshness. Instructions

1.Heat butter in a non-stick skillet over medium-high heat.
2.Add chopped onion, green chilies, and grated ginger. Cook until onion is soft and translucent, around 2-3 minutes.
3.Pour in beaten eggs, heavy cream, and salt into the skillet with onion mixture and stir constantly until eggs are cooked to desired texture.
4.Add chopped cilantro to the eggs, mix well and turn off the heat.
5.Serve hot with toast, naan or rice.
