Ingredients

500 g kadaifi
250 g butter ( you can use margarine )
2 cups sugar
2 cups water
1 1/2 liters milk
120 g custard powder
10 tablespoons sugar ( you can reduce to 8 or increase to 12 tbs )
100 g dark chocolate couverture
orange zest ( from one small orange )
1 tablespoon cognac ( can use rum instead )
400 g Cool Whip ( I use a tin of Morfat )
250 g icing sugar
1/2 teaspoon vanilla essence
1/2 teaspoon cognac ( optional )

Ekmek Kadaifi is a sweet and delightful pastry that is popular in Turkey and the Middle East. It is made from shredded phyllo dough, also known as kadaifi dough, layered with bread and soaked in a syrupy mixture of sugar and water. This particular recipe adds a twist to the traditional Ekmek Kadaifi by topping it with a delectable chocolate custard, making it a perfect dessert to serve at any occasion. The custard mixture is infused with a hint of cognac and orange zest, adding a unique touch to the recipe. This dessert is often served during holidays and special occasions, and is sure to impress guests with its rich flavor and satisfying texture.

Instructions

1.Preheat oven to 180°C.
2.Melt butter in a saucepan over low heat; add kadaifi and stir until well coated.
3.Grease a 30cm x 23cm baking tray with some butter and spread half of the kadaifi mixture covering the baking tray firmly, pressing it down firmly and evenly.
4.Using a serrated knife; divide the ekmek into 4/5 inch slices then layer on top of the kadaifi mix.
5.Pour the remaining kadaifi mix on top of the ekmek, pressing it down firmly.
6.Pour the sugar and water into a saucepan and simmer until sugar dissolves and the mixture thickens to around 15-20 mins.
7.Pour the sugar syrup mixture over the kadaifi-ekmek and set aside to cool down completely.
8.In a saucepan; heat up the milk and 10 tbsp of sugar.
9.In a mixing bowl, whisk together the custard powder and 10 tablespoons water to make a soft paste.
10.Pour the custard paste into the simmered milk and keep stirring continuously until it thickens ( around 20-25 mins).
11.Take custard off the heat and stir in the chopped chocolate, orange zest, and a tablespoon of cognac. Let it cool.
12.In a mixing bowl, whisk together the cool whip, icing sugar, and vanilla essence until stiff peaks form. You may now add the 1/2 tablespoon of cognac (optional).
13.Spread the custard mixture over the kadaifi-ekmek and finish up with the cool whip mixture, making sure it is spread out evenly on top of the custard.
14.Set it aside in a fridge and let it cool for an hour before serving. Garnish with chocolate shavings.
