Ingredients

1 2/3 cups glutinous rice
2 cups water
2 tablespoons white sugar

5 dates
3/4 cup red bean paste
3 tablespoons toasted walnuts , finely chopped
1/2 teaspoon vegetable oil
1 pineapple ring
1 tablespoon toasted pumpkin seeds , finely chopped
1 tablespoon roasted peanuts , finely chopped
10 canned mandarin orange segments
Eight Treasure Rice Pudding, also known as 'Babaofan', is a traditional Chinese dessert that has been enjoyed for centuries. As the name suggests, this dessert is made with eight different ingredients, including glutinous rice, red bean paste, dates, walnuts, pineapple, pumpkin seeds, mandarin orange, and caramelized sugar. Instructions

1.Rinse the glutinous rice with water 3-4 times and then drain it properly.
2.In a pot add soaked rice and water and bring it to a boil over medium-high heat.
3.Once the rice comes to a boil, reduce the heat to low and let it simmer for 20 minutes, or until completely cooked.
4.In another saucepan, heat white sugar and butter over medium heat until it turns to caramel.
5.Add chopped dates and stir until the dates are coated in the caramel.
6.Once the rice is cooked, stir in the caramelized dates, red bean paste, and toasted walnuts.
7.Heat vegetable oil in a pan and add the pineapple ring. Cook it for 2-3 minutes on each side or until golden brown.
8.Slice the pineapple into small pieces and add to the rice pudding mixture.
9.Serve the rice pudding hot or cold, garnished with mandarin orange segments and topped with roasted peanuts and toasted pumpkin seeds.
