2 1/4 cups flour
1/2 cup cornstarch
1 1/4 cups butter or 1 1/4 cups margarine , room temperature
1 cup confectioners ' sugar
2 teaspoons vanilla
1/4 cup unsweetened cocoa powder
1 egg white

Instructions

1.Preheat oven to 350°F.
2.In a bowl, whisk together flour and cornstarch.
3.In another bowl, beat butter or margarine until creamy.
4.Add confectioners' sugar and vanilla, beat until fluffy.
5.Gradually mix in the flour mixture.
6.Divide dough in half.
7.Mix cocoa powder and egg white into one half of the dough.
8.Press the plain shortbread dough evenly into an 8-inch square pan.
9.Spread raspberry jam on top.
10.Press the cocoa shortbread dough on top of the jam layer.
11.Bake in preheated oven for 40 minutes or until golden brown.
12.Cool the shortbread in the pan for 10 minutes.
13.Invert onto wire rack to cool completely.
14.Slice into 16 pieces. Serve and enjoy!
