3/4 cup cracked wheat
6 large tomatoes
4 small tomatoes

3 tablespoons olive oil

Instructions

1.Soak the cracked wheat in warm water for 5 minutes and then drain and squeeze out the excess water.
2.Cut off the top of the large tomatoes and scoop out the flesh with a spoon.
3.Dice the small tomatoes and mix with the cracked wheat, chopped chives, parsley, mint, olive oil, lemon juice, salt and pepper.
4.Stuff the large tomatoes with the mixture.
5.Place the stuffed tomatoes in a baking dish, pour some water at the bottom of the dish, and bake in a preheated oven at 180°C for 40 minutes.
6.Serve hot, garnished with washed lettuce leaves.
