Beid Hamine, which roughly translates to 'slow-cooked eggs', is a popular breakfast recipe in Egypt. The extended cooking time results in eggs that are tender and flavorful, with a unique texture that is different from boiled or fried eggs. The use of onion skins and ground coffee (optional) adds a subtle flavor to the eggs and gives them a deep brown color. It's a simple recipe that can be made in large batches for meal prepping or a weekend brunch with friends and family. Serve the eggs with your desired sides or accompaniments, such as bread, cheese, or vegetables.

Instructions

1.Wash the onion skins and place them in a large pot.
2.Add the eggs on top of the onion skins and pour in enough water to cover the eggs.
3.Add in the oil and ground coffee (optional) to the pot.
4.Bring the pot to a boil, then turn down the heat to low and simmer for 6-8 hours.
5.Remove the eggs from the pot and serve them hot with your desired sides or accompaniments.
