Ingredients

1 kg all-purpose flour
1 cup ghee or 1 cup butter
1/2 cup cream
1 pinch salt
1/2 teaspoon vanilla
2 tablespoons instant yeast
3 -4 tablespoons sugar
1/2 liter sour milk or 1/2 liter yogurt
1 tablespoon anise
1 tablespoon fennel seed
1 tablespoon sesame seeds
Koras bread, also known as Egyptian countryside bread, is a very famous and traditional bread cooked in Egypt. It is commonly consumed with creamy soups or beans during breakfast or dinner. Koras bread is different from other types of bread due to its texture, taste and unique seasoning. The bread is light and fluffy, and the addition of anise and fennel seeds gives it a distinct taste. Instructions

1.Mix the flour, sugar, instant yeast, and salt in a large bowl.
2.Add the ghee, cream, vanilla, and sour milk and mix well.
3.Add the anise, fennel seed, and sesame seeds and knead the dough until it becomes smooth and elastic.
4.Cover the bowl with a damp cloth and let it rest for at least an hour in a warm place.
5.Preheat the oven to 180°C (350°F) and grease a baking tray.
6.Take a portion of the dough and shape it into a circle or oval shape.
7.Place the shaped dough onto the greased baking tray and let it rise for another 15-20 minutes.
8.Bake the bread for 20-30 minutes until its surface becomes golden brown.
9.Allow it to cool and serve it with butter or jam.

PROS

This bread has a unique taste and flavour due to the use of anise and fennel seeds.

It is suitable for vegans as it doesn’t include any animal products except for the sour milk.

It is a perfect dish to accompany tea or creamy soups.

CONS

The bread requires a long resting and rising time, so it is time-consuming to prepare.

It might be hard to find sour milk, so yogurt can be used as an alternative but it will give a different taste.
