2 cardamom pods
1 whole chickens , skinned
1 large onion , halved
1 bay leaf
2 packages fresh spinach
1 tablespoon olive oil
2 teaspoons ground coriander
3/4 teaspoon salt
10 garlic cloves , crushed
3 tablespoons fresh lemon juice
2 cups hot cooked rice

Instructions

1.In a large pot, bring 8 cups of water to a boil with the cardamom pods, halved onion, and bay leaf.
2.Add the whole skinned chicken to the pot and reduce the heat to a simmer until the chicken is cooked through, about 60-70 minutes.
3.Remove the chicken from the pot and set it aside to cool. Discard the onion and bay leaf.
4.In a blender or food processor, puree the fresh spinach until it's finely chopped.
5.In a large skillet, heat up the olive oil over medium heat. Add the ground coriander, garlic, and salt, and cook for 1 minute.
6.Add the pureed spinach to the skillet and cook for another 5 minutes.
7.Shred the cooked chicken and add it back to the large pot with 2 cups of the chicken stock from the pot. Add the spinach mixture to the pot as well.
8.Bring the pot to a simmer and cook for another 10 minutes. Stir in the fresh lemon juice.
9.Serve the stew hot over hot cooked rice.
