Egyptian Fish Kebabs are a popular Middle Eastern dish that combines tender chunks of fish with a colorful array of vegetables and fruits. This recipe calls for sea bass, a lean and meaty fish that is packed with flavor and protein. The fish is marinated in a tangy and spicy mixture of vinegar, oil, cayenne, mustard powder, salt, and pepper, which adds a zingy kick and tenderizes the flesh. The fish is then threaded onto skewers with mushroom caps, green peppers, pineapple, tomato wedges, and onion chunks, which provide a variety of textures and flavors. Grilling the kebabs over medium-high heat caramelizes the natural sugars in the vegetables and fruits, giving them a smoky and sweet taste. Serve the kebabs hot with a side of rice or couscous for a wholesome and satisfying meal.

Instructions

1.In a large bowl, whisk together the vinegar, oil, cayenne, mustard powder, salt, and pepper.
2.Add the cubed fish to the bowl, making sure they are coated in the marinade. Cover and marinate in the fridge for at least 1 hour, or up to 4 hours.
3.Preheat the grill to medium-high heat.
4.Thread the marinated fish, mushroom caps, green peppers, pineapple, tomato wedges, and onion chunks onto skewers.
