Ingredients

2 cups dried fava beans
1 medium onion , chopped
1 large potato , peeled and quartered
6 garlic cloves
1 teaspoon ground coriander
1 teaspoon ground cumin
2 teaspoons salt

1/2 cup vegetable oil ( for deep frying )
3 large green onions , chopped small
3/4 cup dried breadcrumbs
1/2 cup deep fried dried onions
1/2 teaspoon baking soda
1/4 cup sesame seeds , lightly roasted
4 large radishes , sliced
1/2 cup finely chopped fresh parsley
1 large tomatoes , diced
1 large dill pickle , diced
1 medium jalapeno pepper , seeded and diced
6 whole 6 1/2 inch pita bread
1 cup finely shredded lettuce ( , of your choice )
1/2 teaspoon beau monde seasoning
Egyptian Falafel is a common street food in Egypt. It's a popular filling for pita pockets and is often sold along with other fillings such as lettuce, tomatoes, and pickles. Instructions

1.Soak the dried fava beans for 24 hours in cold water, then drain.

3.Stir in the chopped green onions, breadcrumbs, deep fried dried onions, baking soda, and sesame seeds.
4.Heat the vegetable oil in a deep frying pan over medium heat.
5.Using a small cookie scoop or spoon, form the mixture into small balls and fry in batches until golden brown, flipping once.
6.Drain on a paper towel-lined plate and sprinkle with beau monde seasoning.
7.To serve, cut the pita bread in half and fill with shredded lettuce, sliced radishes, diced tomatoes, diced dill pickle, diced jalapeno pepper, and the falafel balls.
