Instructions

1.In a deep skillet, heat olive oil over medium heat. Add chopped onions and cook until they are softened and lightly browned

3.Add tomato sauce and 16 ounces of water, then stir to combine. Bring mixture to a boil.
4.Reduce the heat to medium-low and stir in rice. Cover, leaving a small gap to let steam escape, and cook for 15-20 minutes, or until rice is tender
5.Make 6 wells in the rice mixture by gently pressing a spoon into the surface of the sauce. Crack eggs into each well.
6.Cover the skillet and simmer eggs for 5-7 minutes, or until they reach desired level of doneness. Garnish with parsley leaves and serve hot.
