Ingredients

4 large baking potatoes , hot
salt and pepper
1/2 cup cheddar cheese or 1/2 cup gruyere cheese , shredded
8 eggs
fresh parsley or chives , finely chopped , for garnish

Instructions

1.Preheat oven to 400°F. Line a baking sheet with parchment paper.

3.Place the shells on the baking sheet and roast for 20-25 minutes, or until the edges are crispy and the skins are golden brown.
4.Remove from oven and sprinkle shredded cheese on the bottom of each potato shell. Crack an egg over the cheese and season with salt and pepper.
5.Return to oven and bake for another 10-12 minutes or until the eggs are cooked to your liking.
