Ingredients

1 leek , large , white and light-green part only ( root end trimmed )
1 cup gruyere cheese , finely grated
6 ounces bacon , thick-sliced , cooked , drained and cut into 1/2-inch lengthwise strips
1/4 teaspoon salt
1/4 teaspoon black pepper , freshly ground
1/8 teaspoon nutmeg , freshly grated
8 large eggs
4 teaspoons heavy cream

Instructions

1.Preheat the oven to 375°F.
2.Slice the leek in half lengthwise and then slice each half into thin half-moons.
3.In a saucepan of boiling water, blanch the leek for 2 minutes and then drain it.

5.Divide the leek, gruyere cheese and bacon equally among the 4 ramekins.
