Ingredients

6 medium size eggplants
4 tablespoons olive oil
4 green peppers , diced
4 medium size onions , chopeed
1/2 cup chopped celery
3 garlic cloves , chopped
1 lb shelled medium-sized shrimp
1 lb white lump crabmeat , picked over
1/2 cup chopped parsley
salt , to taste
fresh ground black pepper , to taste
crushed red pepper flakes , to taste
2 cups fresh breadcrumbs ( or more )
1 teaspoon paprika
Eggplants stuffed with crab and shrimp is a classic dish in the New Orleans cuisine. This dish is a perfect appetizer that will impress your guests with its presentation and flavor. Instructions

1.Preheat oven to 350°F (175°C).
2.Cut the eggplants lengthwise in half and scoop out the flesh leaving about a 1/4-inch wall.
3.Place eggplant shells in a baking dish, sprinkle with salt and drizzle with 2 tablespoons olive oil. Cook for 25 minutes or until tender.
4.Meanwhile, heat the remaining 2 tablespoons of olive oil in a skillet over medium heat and cook the onions and green peppers until tender. Add garlic, celery, paprika, and red pepper flakes and cook for another 5 minutes.
5.Add the shrimp, crabmeat, and parsley to the skillet and season with salt and black pepper. Cook for 5 minutes or until shrimp are fully cooked.
6.Remove from heat and stir in fresh breadcrumbs to thicken the mixture.
7.Spoon the crab and shrimp mixture into the eggplant shells, pressing down gently.
8.Combine the remaining breadcrumbs with paprika and sprinkle on top of each eggplant.
9.Bake for 15 minutes or until golden brown and crispy on top. Serve hot.
