Ingredients

2 medium eggplants , halved
1 cup couscous
1 can garbanzo beans , drained
1 1/4 cups cherry tomatoes or 1 1/4 cups grape tomatoes , halved
1 cup plain yogurt
4 ounces feta cheese , crumbled
1/2 cup raisins
1 teaspoon dried basil , crumbled or 1/4 cup fresh basil , minced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons pine nuts or 2 tablespoons toasted slivered almonds
2 tablespoons olive oil or 2 tablespoons peanut oil
Eggplants Stuffed With Couscous Feta Goodness is a fun and delicious way to enjoy eggplants for dinner. Instructions

1.Preheat oven to 400°F (200°C).
2.Using a paring knife or a serrated grapefruit spoon, cut around the inside of the eggplant halves, leaving a 1/2-inch border. Scoop out the eggplant flesh and chop coarsely.
3.In a bowl, mix together the couscous, garbanzo beans, cherry tomatoes, yogurt, feta cheese, raisins, basil, salt, and pepper. Stir in the chopped eggplant.
4.Stuff the eggplant halves with the couscous mixture, pressing it down firmly. Sprinkle the pine nuts over the top.
5.Drizzle the olive oil over the top and around the edges of each eggplant half.
6.Place the stuffed eggplant halves on a baking sheet and bake for 35-40 minutes or until they are tender and the stuffing is lightly browned.
