Ingredients

1 medium eggplant , peeled and thinly sliced
1 package dry ziti pasta
1 container ricotta cheese
2 eggs , beaten
1 pound mozzarella cheese , shredded
1/2 cup grated Pecorino Romano cheese
1 jar spaghetti sauce , or your favorite recipe
1 pinch salt and pepper to taste
Eggplant-Ziti Parmesan is a classic Italian-American dish that combines the heartiness of pasta with the earthy flavors of eggplant and zesty spaghetti sauce. Instructions

1.Preheat oven to 350 degrees F (175 degrees C).
2.Bring a large pot of lightly salted water to a boil. Add ziti pasta and cook for 8 to 10 minutes or until al dente; drain and set aside.
3.In a medium bowl, beat eggs and mix with ricotta cheese, then mix in half of the shredded mozzarella cheese and all of the grated Pecorino Romano cheese. Set aside.
4.In a large skillet over medium heat, cook eggplant slices in oil until browned on both sides.
5.Spread spaghetti sauce on the bottom of a 9x13 inch baking dish, then add a layer of cooked ziti on top of the sauce. Next, layer the eggplant slices over the ziti, then spoon on the cheese mixture. Top with the remaining ziti and spaghetti sauce.
6.Sprinkle the remaining mozzarella cheese over the ziti and spaghetti sauce.
7.Bake in preheated oven for 30 minutes, or until cheese and spaghetti sauce are bubbly.
8.Allow to cool for a few minutes before serving.
