Instructions

2.Meanwhile, spray heavy medium skillet with nonstick spray. Add onion and garlic; sauté until just softened, about 5 minutes. Add tomatoes with their juices, mint, and oregano. Bring to boil. Reduce heat; simmer uncovered until slightly thickened, about 10 minutes.
3.Spoon tomato sauce over eggplant rounds. Sprinkle with cheese. Bake until cheese softens, about 8 minutes longer. Sprinkle with basil and serve warm or at room temperature.
