Ingredients

1 1/2 cups water
3/4 cup medium-grain white rice
1 eggplant , cut into 4 slices
1 splash olive oil
salt and ground black pepper to taste
2 sheets nori seaweed
1 small avocado , sliced 3/4-inch thick

Instructions

1.Rinse the rice until the water runs clear. Drain the water and place the rice and water in a saucepan. Bring to a boil over high heat and once boiling, reduce the heat to low and simmer, covered, for 18 minutes or until the water has been absorbed. Remove from heat and let stand for 5 minutes.
2.Preheat the oven to 375 degrees F (190 degrees C)
3.Place the eggplant slices on a generous splash of olive oil on a baking sheet, turning to coat both sides. Season with salt and pepper, then roast in the oven for 10-12 minutes or until the eggplants are tender. Remove the baking sheet from the oven and let the eggplants cool to room temperature.
4.Lay a sheet of nori on a bamboo sushi mat, then spread rice over the top of the nori, pressing gently to make sure the rice sticks.
5.Place an eggplant slice over the rice layer, followed by a few avocado slices, then roll the sushi tightly, starting from the bottom of the mat and rolling towards the top, pressing gently to make sure the roll is tight. Repeat with the remaining ingredients.
6.Once all the sushi rolls are made, slice them into 1-inch pieces using a sharp, serrated knife. Serve immediately with wasabi, soy sauce, and pickled ginger on the side.
