1 1/2 lbs eggplants
1/4 cup canola oil

Instructions

1.In a medium skillet, over medium heat, toast the sesame seeds for 3-5 minutes or until they are golden brown. Transfer to a plate and let cool.
2.In the same skillet, add the peanuts and toast for 3-5 minutes or until they are lightly browned and fragrant. Transfer to a food processor and pulse until coarsely ground.
3.In a small bowl, whisk together 1/4 cup of water, brown sugar, salt, garlic, cayenne, and turmeric until smooth and combined.
4.In the same skillet, heat 2 teaspoons of oil over medium heat. Add the spice paste and cook, stirring frequently, until it has thickened and darkened in color. This should take about 3-5 minutes. Transfer to a bowl and let cool.
5.Preheat the oven to 400 degrees F. Cut the eggplants in half lengthwise and brush the cut side with canola oil. Place cut side down on a baking sheet and roast for 20 minutes or until the flesh is soft and tender.
6.Using a spoon, scoop out the flesh from the eggplants and add it to the spice paste. Add the ground peanuts, cilantro, and remaining oil (2 tablespoons and 2 teaspoons). Mix well.
7.Stuff each eggplant half with the masala mixture. Return the eggplants to the baking sheet and bake for another 10-15 minutes or until the tops are golden brown. Serve hot.
