1/3 cup Italian seasoned breadcrumbs
1 tablespoon grated parmesan cheese
1 teaspoon italian seasoning
1/4 teaspoon garlic powder
1 medium raw eggplant
2 large egg whites , lightly beaten
1 1/2 cups canned tomato sauce
1/2 cup part-skim mozzarella cheese , shredded
Eggplant Parmigiana is a classic Italian dish that is loved by many. In this Weight Watchers-friendly recipe, we have taken the traditional recipe and made it healthier without sacrificing taste. The eggplant rounds are coated in a crispy breadcrumb mixture and then baked to perfection with tomato sauce and melted mozzarella cheese. Instructions

1.Preheat oven to 400°F. Coat a 9-inch square baking dish with cooking spray.
2.In a shallow plate, combine breadcrumbs, Parmesan, Italian seasoning and garlic powder. Mix well.
3.Cut eggplant into 1/2-inch thick rounds. Dip each side of eggplant rounds into egg whites, then coat evenly with breadcrumb mixture. Place eggplant rounds onto prepared baking dish. Repeat until all eggplant slices have been coated.
4.Pour tomato sauce over eggplant slices. Sprinkle shredded mozzarella cheese on top.
5.Bake for 20-25 minutes, or until cheese is melted and bubbly. Let cool for a few minutes before serving.
